Energy Balls

A wonderful nutrient rich snack to satisfy that sweet tooth - packed with iron, potassium, magnesium, Vitamin C and fibre

Ingredients

  • 100 g dates
  • 25 g dried goji berries
  • 25 g pistachios
  • 50 g almonds
  • 100 g shredded coconut
  • 3 tbsp cacao powder
  • 30 g coconut oil

Instructions

  1. Soften the dates in water for 15 minutes then blend together all of the ingredients except for the coconut oil.

  2. Melt the coconut oil and add it to the mixture.

  3. Shape with your hands into round balls and leave them in the fridge to set.
