Lamb & Mint Burgers

Succulent and tasty lamb burgers flavoured with mint, garlic and coriander are great for the BBQ grill

Ingredients

  • 450 g minced lamb
  • 1 large onion peeled, roughly grated and squeezed of excess liquid
  • 1 small garlic clove peeled and finely chopped
  • 1 small handful fresh mint leaves finely chopped
  • 1 small handful fresh coriander leaves finely chopped
  • 1-2 tbsp redcurrant jelly
  • 1 handful dried breadcrumbs around 50g
  • sea salt and freshly ground black pepper
  • 2 tbsp sunflower oil

Instructions

  1. Mix all the ingredients in a bowl so that they are well combined.

  2. Using hands, take a handful of the mixture and shape into a burger – easy!

  3. Heat the oil and add the burgers, taking care with the hot fat, and don’t crowd the pan. Cook for 10-12 minutes, turning only once so they are golden brown.
